Cupcake Meatloaf

Want a twist on a dish we all know and love? Want to make a basic dish fun and visually appealing? Yes? Well let's make cupcake meatloaf! Turn a regular dish into the talk of your dinner party.

1lb ground beef
1 small red onion, diced
1 small bell pepper, diced
3 green onions, chopped
2 tsp minced garlic
1 tsp Italian seasoning
1 cup bread crumbs
2 tsp Worcestershire sauce
1 egg
Salt and pepper to taste

*Preheat your oven to 350F


  1. Place meat in a large mixing bowl and combine well with all the seasoning
  2. Add the bread crumbs and egg combine thoroughly
  3. Pull chunks of meat and pack in greased cupcake pan to mold the shape of each mini loaf
  4. Place pan in your oven and bake for 35 minutes or until thoroughly cooked
Once removed from the oven, pop you mini meatloaf cakes from the pan and top with mashed potatoes as pictured.
