White Turkey and Sausage Chili

As the weather gets cooler, out comes the crock pots and dutch ovens for those comforting yummy soups and chilis. This recipe is not only delicious but super easy to prepare.



Ingredients
2 cups cooked turkey, chopped
2 cups Italian sausage
1onion, chopped
2 poblano peppers, chopped
2 16oz cans of navy beans, drained
10 oz low sodium chicken stock
Ground cumin
Chili powder
Dried oregano
Black pepper
1 cup 2% milk
1tbs vegetable oil

Preparation

  • In a large pan (dutch oven) saute onions and pepper in oil until tender
  • Add sausage to the pan and crumble meat while you stir until brown
  • Add in cumin, chili, oregano and black pepper to taste.
  • Stir in beans and chicken stock and bring to a boil.
  • Lower heat and let thicken for 10 to 12 minutes.
  • Pour in milk and stir in cooked turkey. 
  • Cook for 3 more minutes then serve
*Optional - top with shredded cheese


Cupcake Meatloaf

Ingredients
1lb ground beef
1 small red onion, diced
1 small bell pepper, diced
3 green onions, chopped
2 tsp minced garlic
1 tsp Italian seasoning
1 cup bread crumbs
2 tsp Worcestershire sauce
1 egg
Salt and pepper to taste

*Preheat your oven to 350F

Preparation

  1. Place meat in a large mixing bowl and combine well with all the seasoning
  2. Add the bread crumbs and egg combine thoroughly
  3. Pull chunks of meat and pack in greased cupcake pan to mold the shape of each mini loaf
  4. Place pan in your oven and bake for 35 minutes or until thoroughly cooked
Once removed from the oven, pop you mini meatloaf cakes from the pan and top with mashed potatoes as pictured.
