Mahi Mahi Tacos

Do you love tacos? I do...Especially fish tacos! They're so easy to make and there's so much flavor is such a simple food. It's also a very healthy option and you can jazz it up with whatever you want!

Ingredients
2 mahi mahi steaks
2 cups chopped green and purple cabbage
2 whole wheat tortillas
1 tbsp lime juice
1 tsp crush garlic
1 tbsp creole seasoning

For Pico de Gallo
1 small red onion, diced
1 small green bell pepper, diced
1 large tomato, diced
1 tsp crushed garlic
1 jalepeno, diced finely (optional)
1/2 tsp salt
Juice of 1 lime
Sour Cream (optional)

Preparation

  • Pour lime juice over fresh fish, rinse then pat dry with single use paper towel
  • Rub fish steaks with creole seasoning and crushed garlic, set aside for 10 minutes
  • Toss all Pico ingredients in a bowl and set aside
  • Lightly coat your pan with cooking spray and sear your fish, at least 5 minutes on both sides or until done to your liking. Then remove from heat. (I like my fish cooked right through but still moist)
  • In another pan, lightly toast tortillas, 1 minute on each side
  • Place tortillas in plates and top with cabbage mix, fish and spoon Pico de Gallo over fish. Place a dollop of sour cream on top if you so desire
Serve Immediately!
