Island Roasted Potatoes
2 lbs potatoes
8 oz kernel corn
2tbsp EVOO
1tsp black pepper
1 tsp paprika
1 tsp salt
1 tbsp rosemary
1 tsp oregano
* Preheat oven to 400F
Preparation
- Wash potatoes the cut into eighths and set aside
- In a large mixing bowl combine EVOO, salt, pepper, paprika, rosemary and oregano
- Add kernel corn and potatoes and mix well.
- Spray baking tray with Pam then arrange potatoes on tray, skin side down
- Evenly distribute corn over potatoes, place in oven and bake until fork tender and golden brown
The perfect side dish to any entree
