Island Roasted Potatoes

Bland food is NOT an option in Caribbean Cuisine. We like food bursting with flavor hence the use of several spices to kick things up several notches! Here's simple recipe that will give your good ole potatoes a flavor makeover. Make sure it's on your next dinner menu!




Island Roasted Potatoes

2 lbs potatoes
8 oz kernel corn
2tbsp EVOO
1tsp black pepper
1 tsp paprika
1 tsp salt
1 tbsp rosemary
1 tsp oregano

* Preheat oven to 400F

Preparation

  • Wash potatoes the cut into eighths and set aside
  • In a large mixing bowl combine EVOO, salt, pepper, paprika, rosemary and oregano
  • Add kernel corn and potatoes and mix well.
  • Spray baking tray with Pam then arrange potatoes on tray, skin side down

  • Evenly distribute corn over potatoes, place in oven and bake until fork tender and golden brown
