Preparing Mango Salsa is super easy and you get to snack on pieces of juices while chopping your ingredients...you don't? Well I do :) You only need 8 ingredients, 5 of which are considered power foods. Can you guess the 5? Not only is it yummy and pretty to look at with all the festive colors, it's also good for you!
1 1/2 cups fresh mango, diced
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1 cup red onions, finely chopped
1 tsp jalapeno pepper, finely chopped
1 tbsp fresh lime juice
1 tsp kosher salt
1 tsp black pepper
- Combine all the ingredients together in a last mixing bowl.
- Cover with plastic wrap and chill for 30 minutes before serving.
